Proust's Madeleine
If "Madeleine de Proust" remains a well-known popular expression and directly linked to the Roman de La Recherche , Maxime Beucher wanted to make this Madeleine real and, 8 years ago, registered the trademark "La Madeleine de Proust" to bring to light not a delicious cake, in the shape of a scallop shell, as Proust had described it a century before.
This pretty Madeleine was awarded a gold medal for its taste quality, thanks to the excellence of the recipe, created by Camille Lesecq, former pastry chef at Le Meurice and now associated with Christophe Felder.
Proust's Madeleine had precise specifications, the source of which was none other than Volume 1 of La Recherche : On the side of Swann . “ I searched and found the mold which corresponds to the form described in the Research, a mold from the 19th century. At the beginning of its history, the madeleine was not an individual cake: there were molds to make cakes weighing 90 to 200 grams. From a 200g mold, I reduced the madeleine to 45g and 30g in homothety... I wanted La Madeleine de Proust to be recognizable among all the madeleines on the market. It had to be the best in the world and the most beautiful in honor of our famous French writer: Marcel Proust . »
La Madeleine de Proust is now available in various delicatessens including the Bon Marché grocery store in Paris. It is presented in three flavors: vanilla, lemon, chocolate.
